Fleurie Côte des Labourons - Cuvée d'exception Pardon & Fils

Tasting

Eye: Deep dark red robe 
Nose: Aromas of very ripe small black fruits (blackcurrant, blueberries), with a slightly woody and vanilla notes due to its aging for 7 months in barrels.
Palate: well balanced, a full-bodied and rich wine with silky tannins, melted oak and a generous long finish.

Serving

Serve at 15 - 16° with poultry, roasted white meats, red meats.

Keep : 6 to 8 years

Terroir

Very old vines over 50 years old, planted on the heights of Fleurie, 350 to 400m above sea level, "Côte des Labourons" climate is very specific, the vineyard of the domaine is on very steep slopes who are often 35 to 50%  and the soil is made up of pink granite, typical of the Cru Fleurie.
For this "cuvée" we use our oldest vines who have more than 80years old !
It makes small and riped grappes who gives fresh and very fuity concentrated wines.

Winemaking

Selection of our best plots, vinified in concrete vats.
Manual harvest at optimal maturity.
Semi-carbonic maceration for 10 days (whole bunches).
Alcoholic fermentation under temperature control.
Residual sugar < 1.5 gr. alcoholic degree: 13°.
Aged in Burgundy barrels for 6 to 7 months.
