From the Chardonnay grape, this vintage has fresh and aromatic scents of white flowers and lemon. Its pleasant and elegant mouth lingers on fruity notes.
Serve at 11 - 12 ° preferably within 2 years on appetizers, fish, crustaceans, white meats and poultry with cream.
100 % Chardonnay
The terroir is essentially composed of clay-limestone soil on the hillside where pinot noir, gamay and aligoté are cultivated. Chardonnay is reserved for the deepest soils of the lower loam and more rich, to avoid any risk of water stress, phenomenon natural which could affect the quality of the grapes.
Harvesting takes place mechanically for white grape varieties, over ten days. The harvested musts ferment for several weeks in temperature-controlled vats, after being enzymed and inoculated with selected yeasts. The harvest is destemmed.
