Winemaking

Hand-harvested at full ripeness in early September.
Short semi-carbonic maceration (whole bunches) for 2 to 3 days in stainless steel vats before pressing.
Pumping over during maceration (allows the juice to rise above the tank in contact with the grapes) every 12 hours to extract maximum flavor and give a boost to the alcoholic fermentation.
Temperature-controlled alcoholic fermentation.
Malolactic fermentation is done at 100%.
Bottled quickly before the third Thursday in November.
