Red garnet intense colour. Flavors of black fruits (cassis, blackberry) with floral notes (violet). The palate is fleshy, souple and very aromatic.
It should serve between 14 to 15 ° as refined dishes of lamb, poultry and white meats.
Keep 3 to 4 years.
The vineyard of the Domaine Pardon represents 7 hectares on the Cru Fleurie, located on the heights of the appellation. The soil is constituted of very homogeneous granitic sand and granite with large crystals. This homogeneity qualified by soil depth and stage of evolution of the original rock to produce elegant wines, fine and very fruity with floral notes.
Hand picked grapes at full maturity in late September.
Semi-carbonic maceration 8 days (whole berries) in stainless steel and cement before pressing.
Alcoholic fermentation temperatures under control..
Residual sugar> 1.5 g alcohol content : 13 °.
Malolactic fermentation, carried out at 100%.
It allows the wine to mature (4-8 months) in tank.
