Eye: Deep garnet red color.
Nose: Very expressive and elegant with notes of strawberry and blackcurrant.
Mouth: Delicate, supple, mineral and fruity. A structured and delicious cuvée.

Serving temperature: 14-15°C.
Pairing: Cold meats, white meats, cheeses.

Aging

Tasting advice: Eat young to appreciate its fresh fruit.
After a few years in cellars, it appears riper and more complex.
Aging potential: Up to 5 years.

Terroir

Cru Chiroubles is a human-sized appellation that spreads over 320 ha (790 acres).
The specificity of Cru Chiroubles is the succession of 4 circuses with valleys with sharp altitude differences: the vineyards are set between 270 and 600 metres above sea-level, with an average of 410 metres above sea-level, ensuring freshness in the wines despite climate change.
The slopes are often over 30%, this is the steepest of the Beaujolais Crus.

Winemaking

Manual harvest, at full maturity of the grapes from September.
Semi-carbonic maceration 8-10 days (whole bunches) in cement vats before pressing.
Alcoholic fermentation under temperature control.
Malolactic fermentation, carried out at 100%.
Aged in vats for 6 to 8 months on lees.
Bottling in early spring.
