Tasting

Eye: Lovely pale pink  salmon color
Nose: delicate aromas of fresh red and black fruits such as blackcurrant, raspberry, cherry, and blackberry.
Palate: A refreshing and sweet attack, very fruity with a delicious and lingering finish.

Serving

It will taste well with an aperitif like salmon toast, but it would be also great with fish or barbecued meats.

Aging

Should be enjoyed when young.
Aging potential: Up to 3 years in the cellar.

Grape

Pinot Noir, Gamay and a touch of Chardonnay are blended to create a base wine in the style of the greatest French sparkling wine houses.

Terroir

The grapes used for the production of Crémant de Bourgogne come from a variety of different terroirs of Burgundy vineyards, from the base of the chalk near "Joigny" to the granites of southern Burgundy, through the coastal limestone of "marl" most often carry the name.

Winemaking

Harvested relatively early to preserve the acidity of the grappes (that gives to the Crémant de Bourgogne his freshness).
The effervescence comes from the addition of the "tirage liquor" (cuvée wine + sugars + yeasts) during bottling.
This results in a second alcoholic fermentation, which releases the carbon dioxide who's creating the bubbles.
It ages for 12 to 15 months on slats to develop most intense aromas.
