Terroir

The grapes used for the production of Crémant de Bourgogne come from a variety of different terroirs of Burgundy vineyards, from the base of the chalk near Joigny to the granites of southern Burgundy, through the coastal limestone and marl most often carry the name.

Winemaking

The base wine is obtained after pressing gently whole bunch (100 liters of juice per 150 kg) Once fermented base wine is ready for printing (adding yeast and sugar and bottling). It is fermented and aged for a minimum of 9 months before being ready for staining (due to the separation of deposit with wine yeasts) and the addition of liqueur de dosage (choice of sweet wine more or less depending on the area) . Our sparkling wine is always measured in "raw" (slightly sweet dry wine). This manufacturing method is known as the "méthode champenoise" or "traditional method"
