Tasting

Appearance: Salmon, clear.
Nose: Very expressive, developing aromas of fresh fruit (grapes), red berries and citrus. Palate: Supple, fruity, pleasant with notes of red fruits and citrus.

Serving temperature : 11°C.
Pairing : Aperitif, grilled meats, salads.

Aging

Tasting advice: Drink when young to appreciate its fruitiness and freshness.
Aging potential: To be enjoyed within 2 years.

Grape

100 % Gamay

Terroir

Vines planted in the village of Oingt, voted the most beautiful village in France, in the golden stones.
Soils: sandy and clay-limestone.
Age of the vines: from 15 to 40 years.

Winemaking

Manual harvest. Three sorting: at harvest, at loading and at reception in the Cellar.
Put into vats, cooled harvest then maceration for 12 to 24 hours at low temperature (11°) to extract the color very slowly.
Pressing by pneumatic press, very gently (<1.4 bars), static settling, fermentation at low temperature (15°c) for 15 to 20 days.
Malolactic fermentation carried out at 100%.
Storage in vats at 14°C before bottling.
