Based in Beaujeu, the historic capital of Beaujolais, the Pardon family produces a Beaujolais-Villages Nouveau typical of the appellation.
This cuvée comes from vines planted in deep granite and sandy soils in the communes of Beaujeu and Lantignié.
Hand-harvested at full ripeness in early September.
Short semi-carbonic maceration for 2 to 3 days (whole bunches) in stainless steel vats before pressing.
Pumping over during maceration (allows the juice to rise above the tank in contact with the grapes) every 12 hours to extract maximum flavor and give a boost to the alcoholic fermentation.
Alcoholic fermentation under temperature controlled.
Malolactic fermentation is done at 100%.
Bottled quickly before the third Thursday of November.
