Tasting

Eye: Pale yellow color with golden highlights
Nose: Expressive and aromatic, revealing notes of dried fruit and acacia flowers.
Palate: Dry, fruity, and mineral with a hints of flint and gunflint.

Serving

Served with a fine fish or poultry with cream.

Aging

to drink now or it can be keep in a cellar for 2 to 3 years

Terroir

With his 51 hectares, the Côte de Léchet enjoys a happy life on the left river bank. It's a very sunny terroir with steep slopes: in some places, they even reach 38%.
The soil is covered in clay and "rabbit earth," a type of calcareous sand degraded by cold and frost. Because of the slope, some pebbles, carried by storm rains, end up at the bottom of the Côte de Léchet.

Winemaking

After ripeness tests, the grapes are harvested mechanically and pressed very quickly.
The juice is send to tanks and treated with enzymes.
After 24 hours, the clear juice is separated from the lees, and yeast is added to initiate alcoholic fermentation.
The temperature is controlled during all the vinification process.
